I LOVE my recipe for Keto Parmesan Pork Rinds Crusted Chicken Cutlets! The chicken is so tender, juicy, and the spice & flavor from the Sriracha and Dijon mustard are fabulous!
2 Chicken Breast OR 4 Chicken Cutlets
2 Tbsp. Dijon Mustard
1 Tbsp. Sriracha
2 Cups Crushed Pork Rinds
1/3 Cup Parmesan Cheese
1 Tbsp. Dried Parsley
2 Tbsp. Sincerely Legenia's Spicy Garlic Seasoning OR Your Favorite All Purpose Seasoning
2 Tbsp. Avocado Oil
1 Tbsp. Butter
Cut chicken breasts in half crosswise (lightly pound chicken breast to thin if necessary)
Combine Dijon mustard and Sriracha. Set aside
Add pork rinds, parmesan cheese, spicy garlic seasoning and parsley to bowl and combine.
Brush mustard and Sriracha all over chicken breast
Dredge mustard coated chicken breast in pork rind mixture. Shake off excess.
Add avocado oil and butter to a hot skillet
Add coated cutlets to skillet and cook until golden brown and cooked through, approximately 2 to 3 minutes on each side. You may need to work in batches as necessary, being sure to add more oil when needed.
